A sparkling Pinot Noir that is good-natured and complex while genuinely expressing its varietal character.
Massís del Garraf, Catalunya, NE Spain.

Varieties: 100% Pinot Noir.

Preparation:

Gently crushed, pressed without destemming. First spontaneous fermentation with natural yeasts of the varieties separately at controlled temperature in stainless steel tanks. Second fermentation in the bottle and aging for 30 months before release. Light fining and f iltration, zero dosage.

Organic certified
Production: 2,500 numbered bottles.
Closure: natural cork.

Tasting notes:

Pale salmon pink, this wine features an expressive nose bursting with lively red fruit, citrus, and dried flowers, complemented by aging notes and hints of toast. The palate is nuanced with a chalky texture, leading to a fresh and delicately saline finish.
