Gently crushed, pressed without destemming. 80% spontaneous fermentation at controlled temperature in stainless steel tanks. 20% fermentation in new French barrels. Aged on lees during 5 months. Aged in bottle for 24 months.
Golden yellow in colour. Lively on nose with notes of peach, pear, white flowers and slightly spicy notes of vanilla and dried fruits. Fine on the palate with tender white fruit, the characteristic fresh minerality and hints of sea salt. Full and balanced with a long, mellow finish.
