Finesse and
creaminess

First spontaneous fermentation of the varieties separately at a controlled temperature for 25 days in stainless steel tanks. The Xarel.lo ferments in 225L French oak barrels where it is aged for 5 months.

Second fermenta- tion in the bottle and exceptionally long ageing in the bottle for 6 years.

Golden yellow in colour. Very intense nose with aromas of white flowers, baked apple, candied fruit and pastries. Slightly oxidative notes enrich the explosion on the palate. Long and creamy with notes of ripe peach, honey, nuts and balsamic nuances. A fine bubble adds sparkle and opens the way to a tasty and persistent finish.
